I made this last night, and everyone loved it. I did substitute bulb garlic and I did use whole wheat penne. 300 calories per 1 cup serving. It is from Cooking Light.

Great News!!!
I just wanted to share with everyone my wonderful news. My school received word today that we have received authorization approval and are now an official International Baccalaureate Primary Years Programme school!!! This is the news we were hoping and patiently waiting for since September. It has been a long hard haul....but entirely worth it. :)

OBAMA!!! (I couldn't think of a title...so, YAY for the 44th President!)
Here in Arvada, we are cutting portions and eating fewer carbs. We have also cut down on soda and unhealthy snack foods. I have also been looking more at labels just to check calories, sugar, and fat. We haven't really added in any extra exercise, however, Mark walks about 10 miles a day at his job and I am constantly on my feet moving around too. Though I doubt I walk anywhere near 10 miles! Oh...and how can I forget...we spend a large majority of the evening and weekend chasing around a very active 19 month old and meeting the needs of a 3 month old! Mark and I would love to add in a workout, but at this time it's just not possible. Overall...we are just changing the way we eat!
P.S. We are both eating almonds...but just as a SNACK!!!

Tristan is still a bit draggy. He went to school today though so I'm hoping for a full day there. He's not playing hockey yet again though.

question for mike
Mike...
if i created a blog for my classroom and invited parents to have access to it, could i somehow block my personal blog participation (ie the road to ????)? i need some evidence of parent communication to meet my performance goals for the year and i thought this would be a new way instead of the copy of the monthly newsletter! however, i don't want parents all up in my personal business. :)

Quick update
hello all...
i just wanted to give you a quick update about my first day back to work with kids. surprisingly, it was a pretty great day! my students were excited to have me back and after our 20 minute talk, things were back to normal (like before I was gone)! they were working and i was happy to be there with them. sadly, i had to say good-bye to one of my students today. it was bittersweet. she was living at the family shelter that feeds into our school so her leaving was actually a positive thing for her and her family. i also had 3 of my students from last year stop by to visit me today. feeling sad about shellie leaving and seeing my old students made me realize the connection that i have with my students, no matter how rough around the edges they may be sometimes. i am now not dreading going to work so much tomorrow. :)
well...that is all for now. i am off to bed (this 5:30am business is starting to catch up)!

When Mark & I brought Gianna home, we started calling her our little peanut baby. If you listen closely to Rosalia, you will hear her call Gianna peanut baby which has pretty much become Rosalia's name for Gianna!
Wow...getting back in the swing of things is taxing!
Hello...
Well today was officially my second day back at work and I'm feeling a bit overwhelmed. I worked until 6 tonight and can't believe how tired my legs and feet are tonight! I fear that I am going to have my hands full getting my students back to a good place. The word on the street is they have become quite disrespectful to each other and that is just not something I can tolerate. Wish me luck as tomorrow my be rough on both me and my students! The good news though is that my room is clean and a bit more organized which gives me a much needed sense of ownership. Undoubtedly, it has been hard to be away from both Gianna and Rosalia, but refreshing to spend time with my friends, who by chance just happen to be my colleagues as well! The more I ponder tomorrow, the closer I get to facing the challenge (in my head just now the Eye of the Tiger is playing! haha)! Thinking about going back to my students makes me realize it is a bit like weight loss. In order for progress to occur, one must be consistent, dedicated, and encouraging. Someone may need to remind me of this by the end of the week...lol!
I am so sorry for Tristan. I really empathize with him. I have had mono and let me tell you...no es bueno. I felt just completely wiped to the point I couldn't even get off the couch. Mom is right about the fact that it took weeks and a pretty horrific rash for the doctor to finally label it mono. Then it was an entire week home from school and then some if I remember correctly. I even remember that I had to miss our basketball playoff game because they were worried about one of my internal organs (possibly my liver or pancreas?) getting hit and bleeding internally. So tell Tristan no wrestling until long after he is better! The other interesting thing I remember is that the doctor said my blood would always carry the mono strand and if ever tested for it, my results would come back positive.
OK...I need to get to bed. I have been very blessed with two wonderful sleepers and need to take advantage of a good nights sleep. Along with this weight loss thing is also the realizationt that I need to become a much more balanced person. This most likely will require a bit of letting go...especially of the things that can wait until tomorrow! I love you all and please tell Tristan that we are thinking of him and wishing him bueno health soon.

Sorry to hear that Tristan has mono all those things are true they had put Suzy on an antibodic she broke out in a rash after three or four trips they finally did the mono test trying to save us money cost us a lot more and took longer for her to get well. Give him our love with lots of hugs and kisses. How long will he be out of school?Mom
Weight loss thoughts
Today, before taking Tristan to the dr, I spent time at the Toyota dealership having the oil changed and replacing a headlight. At any rate, I read a couple of magazines. You've probably heard by now that Oprah has gained back 40 lbs and now weighs 200lbs. She has started to work on losing weight again.
One of the interesting things she said in her magazine is that if you are looking for a reason to fall off the bandwagon, you'll probably find it.
I thought perhaps this would be a good thing for all of us to keep in mind.
I'm pleased to say that I successfully ignored the donuts at the dealership. And I'll just assume that I could do it again if necessary :)

Slow Burda Blog Today
Since the weight loss portion of this blog is slow today, I thought that I'd take a moment to update you regarding Tristan. Ah, you ask, what could there possibly be to update us on about Tristan?
Hmmm...since you asked, Tristan has mono.
It seems to be a very mild case, and he's not been terribly sick, but he has never gotten over the sore throat that he woke up with on the Sunday we were in Primrose. Which is another reason to let you all know. I don't know if it was mono then, but if you have a nagging sore throat, loss of appetite, extreme fatigue, fever, swollen lymph nodes, headaches, sore muscles, skin rash or abdominal pain, then you might want to consider a trip to the dr.

Dad and I went to GI on saturday went to a movie and out for steaks. We had a good time we saw seven pounds. We were back home by dark. Yesterday we finished cleaning the shop.

First full week...bring it on!
I'm right there with ya, Stac. This evening I have been wanting to snack too. Fortunately for us we didn't buy those kinds of foods last time we went to the store. That strategy seems to work quite well. If it's not a healthy snack...just don't buy it. Well...back to work for me tomorrow :(. That means back to running around and having 5 minutes to eat! I can hardly wait. NOT!!!

On day two, I actually weighed more, so I am quite happy to see a decrease today! Mike and I are going low-carb and are watching portion sizes.
I find myself really wanting to snack today. I'm not hungry, but just feel like eating! I'll get a glass of water instead.

Happy Anniversary
Happy Anniversary, Mom and Dad.
During my first weight loss experience, the one thing that I learned is how much food is tied to events. This is especially true during the Holidays but it remains a challenge all year.
This weekend, I watched two hockey games. Nothing goes better with a hockey game than a couple of beers and a pizza or a pork sandwich (or both).
Outside of sporting events and holidays, there are always anniversaries, birthdays and pot-lucks at work. We tend to always tie events or fun things with food. The SuperBowl will arrive shortly, which is another all day eating event.
It is tough.

The joy of breakfast!
Good morning....Mark and I both started the morning off by eating breakfast which is something we usually save for the weekends. Because we don't always eat regularly, we are people that suffer from the deadly large portion. Therefore, we are going to try to eat 3 balanced meals with smaller portion sizes and choose healthy snack options too! It was quite funny...at 4:30am I could hear Mark's spoon clanking against the bowl as he was eating his raisin bran cereal. He is taking this quite serious! Watch out, Mike!
